Over dinner one evening our oldest daughter, Charlotte, stirred her green beans, sipped her milk and calmly announced, "I'm thinking about going to China."

The words rolled out so casually, so matter-of-factly, that it was as if she had just told us she was considering taking the dog for a walk around the block. I swallowed my rice, furrowed my brow, and said, "Um, I know that bean sprouts would have made the dish more authentic, but you don't need to haul off and leave the country to find proper Chinese food."
